Roast Potatoes question

Just to report back... Smashed it! Crispy and fluffy roastie goodness!

Same bag of spuds as previous fail but this time I went for every trick in the book:
  • peeled and put in cold water yesterday
  • Boiled today, drained and roughed up
  • Sprinkled flour on
  • Left them to go cold
  • Used lard as the roasting fat
