Just to report back... Smashed it! Crispy and fluffy roastie goodness!
Same bag of spuds as previous fail but this time I went for every trick in the book:

- peeled and put in cold water yesterday
- Boiled today, drained and roughed up
- Sprinkled flour on
- Left them to go cold
- Used lard as the roasting fat
